Instructions
- Thaw Pastry: Set the frozen vegan puff pastry out at room temperature to thaw for about 30 minutes while you prepare the filling.
- Preheat Oven and Prepare Baking Sheet: Preheat the oven to 425 degrees F and line a large baking sheet with parchment paper.
- Make Filling: In a large bowl, combine the vegan sausage crumbles with the vegan breadcrumbs and mix well until evenly incorporated.
- Prepare Pastry Rectangles: Lightly flour a surface, unfold one sheet of puff pastry and gently roll it out slightly. Using a pizza cutter, slice it into 3 long rectangles. Repeat with the second sheet to yield 6 rectangles total.
- Fill and Seal Rolls: Divide the sausage mixture into 6 equal portions. Place each portion along the center of each pastry rectangle, leaving about an inch on each side and at the ends. Fold the sides over the filling and pinch to seal, using a little water to help stick the edges together.
- Cut and Vent: With a sharp knife, cut each long roll into 2-inch portions. Place the pieces a few inches apart on the prepared baking sheet. Cut small slits on the top of each roll to allow steam to escape during baking.
- Brush and Bake: Brush the tops of the sausage rolls with melted vegan butter. Bake in the preheated oven for 20 minutes or until the pastry is puffed up and golden brown.
- Serve: Remove from oven and serve immediately while warm and flaky.
Notes
- These vegan sausage rolls freeze well after baking. Let them cool completely, place in a freezer-safe bag or container, and freeze. Reheat in the oven or air fryer at 425 degrees F until warmed through.
- For the vegan sausage, Impossible brand works great but you can use any vegan sausage or even homemade tempeh sausage crumble as a substitute.
- If puff pastry is not vegan, check the brand or make your own vegan puff pastry for a fully plant-based option.
- Use panko vegan breadcrumbs for extra crunch or regular vegan breadcrumbs if preferred.
