Description

These Taco Bites are a perfect party appetizer, featuring flavorful taco meat, crispy scoop chips, fresh shredded lettuce, sour cream, cheddar cheese, and cherry tomatoes. Easy to assemble and sure to be a crowd-pleaser!

Ingredients

Scale

Taco Meat Filling

  • 1 lbs. taco meat (prepared using a crunch wraps recipe)
  • ½ cup sour cream
  • 2 cups shredded iceberg lettuce
  • ½ cup shredded cheddar cheese
  • 25 mini cherry tomatoes, halved
  • 50 scoop chips

Instructions

  1. Prepare the Taco Meat: Use your preferred crunch wraps recipe to make and cook 1 lb of taco meat thoroughly until well seasoned and cooked through.
  2. Prep the Toppings: Shred the iceberg lettuce and cheddar cheese, then halve the cherry tomatoes. Place the sour cream into a sandwich bag and cut off one corner to create a piping bag.
  3. Assemble the Taco Bites: Arrange 50 scoop chips on a large serving platter. Spoon about ½ teaspoon of taco meat into each scoop chip.
  4. Add Sour Cream: Pipe a small amount of sour cream over the meat on each chip using the prepared sandwich bag.
  5. Finish with Toppings: Top each bite with shredded lettuce, a sprinkle of shredded cheddar cheese, and half a cherry tomato.

Notes

  • For a vegetarian version, substitute taco meat with seasoned cooked lentils or meatless crumbles.
  • Scoop chips can be replaced with mini tortilla cups if preferred.
  • The sour cream can be swapped with a vegan alternative for a dairy-free option.
  • Prepare the taco meat a day in advance to save time on the day of your event.
  • Use fresh and crisp iceberg lettuce for the best texture contrast.
  • These bite-sized appetizers are best served fresh to maintain chip crispiness.
