Ingredients
Scale
Sweet Potatoes
- 3 large sweet potatoes
Seasonings and Toppings
- 3 tablespoons olive oil
- 1/2 teaspoon cinnamon
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/2 teaspoon red pepper flakes
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1 tablespoon regular or hot honey
- 1/3 cup crumbled feta cheese
- Fresh chives or parsley, chopped
- Additional honey, for serving
Instructions
- Preheat Oven: Preheat your oven to 425°F to prepare for roasting the sweet potatoes.
- Prepare Sweet Potatoes: Wash the sweet potatoes well and pat them dry. Slice each sweet potato into ⅓-inch thick round slices for even roasting.
- Coat with Oil: Drizzle olive oil onto a large rimmed sheet tray. Add the sweet potato rounds, ensuring they do not touch, and toss to coat evenly with oil. Use two trays if necessary to avoid crowding.
- Season Sweet Potatoes: Sprinkle the cinnamon, smoked paprika, ground cumin, ground coriander, red pepper flakes, kosher salt, and black pepper over the potatoes. Drizzle the tablespoon of honey over the top and toss again to coat evenly with the seasonings.
- Roast Sweet Potatoes: Place the trays in the oven and bake for 20 minutes. Then flip each round over and return to the oven for an additional 25 minutes or until the edges become golden and crispy.
- Finish and Serve: Carefully transfer the roasted sweet potato rounds to a serving platter. Add a little more salt if desired, drizzle additional honey, crumble the feta cheese over the top, and sprinkle with chopped fresh chives or parsley. Serve warm.
Notes
- Use two baking trays if your potatoes are large to ensure even roasting and crispy edges.
- For a spicy kick, use hot honey instead of regular honey or add more red pepper flakes.
- Feta can be substituted with goat cheese or a vegan cheese alternative for dietary preferences.
- You can prepare the sweet potatoes up to slicing a day ahead and store them in water to prevent browning.
- Ensure sweet potato rounds have space on the tray to roast evenly and get crispy edges.
