Instructions
- Prepare Pumpkin Cream Cheese Mixture: In a bowl, whisk together cream cheese, powdered sugar, pumpkin spice, and pumpkin puree using a hand mixer until well combined. Set aside.
- Whip the Cream: Using the hand mixer, whisk the heavy cream, powdered sugar, vanilla extract, and salt until the mixture starts to thicken.
- Dissolve Gelatin: Mix powdered gelatin with cold water, then microwave for 10 seconds. Stir until the gelatin crystals dissolve completely.
- Incorporate Gelatin into Whipped Cream: Add the dissolved gelatin to the thickening whipped cream and continue whisking until soft peaks form and the cream holds its shape.
- Soak Ladyfingers: Quickly dip the ladyfingers into the brewed coffee, fully submerging them, then evenly line the bottom of a 9 x 13 inch pan.
- Layer Mixtures: Spread half of the pumpkin cream cheese mixture over the soaked ladyfingers using a small offset spatula, then top with half the whipped cream mixture.
- Repeat Layers: Add another layer of coffee-soaked ladyfingers, followed by the remaining pumpkin cream cheese and whipped cream mixtures.
- Chill: Refrigerate the assembled tiramisu for at least 4 hours or preferably overnight to allow flavors to meld and set properly.
- Garnish and Serve: Before serving, garnish with pumpkin spice and chocolate shavings. Cut into portions and enjoy.
