Description

This Peach Galette is a rustic, easy-to-make dessert featuring sweet sliced peaches on a flaky puff pastry crust spiced with cinnamon and brown sugar. Perfectly golden and bubbling from the oven, it’s best served warm with ice cream or whipped cream for a delightful summer treat.

Ingredients

Scale

Pastry

  • 1 sheet puff pastry thawed

Filling

  • 45 medium peaches sliced ⅓ inch thick
  • 2 teaspoons cinnamon
  • ⅓ cup brown sugar
  • 1 tablespoon cornstarch
  • 1/4 cup unsalted butter melted

Topping

  • 1 large egg whisked
  • 2 tablespoons coarse granulated sugar

Instructions

  1. Preheat the oven: Set your oven to 400°F (200°C) to ensure it’s hot enough for baking the galette properly.
  2. Prepare the crust: Roll out the puff pastry just enough to fit the bottom and slightly up the sides of a 10-inch oven-safe skillet. Press gently and then refrigerate while preparing the filling.
  3. Mix the spices: In a small bowl, combine the cinnamon, brown sugar, and cornstarch to create a spiced sugar mixture.
  4. Assemble the base: Sprinkle half of the cinnamon-sugar mixture evenly over the bottom of the chilled puff pastry.
  5. Arrange the peaches: Layer the sliced peaches over the spiced pastry base in overlapping circles or rows for an attractive presentation.
  6. Add remaining spice: Evenly sprinkle the remaining cinnamon-sugar mixture over the peach slices.
  7. Create a border: Fold the edges of the puff pastry over the peach filling to form a rustic crust border, partially covering the peaches.
  8. Apply egg wash and sugar: Brush the folded pastry edges with the whisked egg and sprinkle with coarse granulated sugar for a golden, sweet finish.
  9. Drizzle butter: Pour the melted unsalted butter over the peach filling to enhance flavor and aid browning during baking.
  10. Bake: Place the skillet in the preheated oven and bake for 35 minutes, or until the crust turns golden and the peaches are bubbling.
  11. Cool and serve: Allow the galette to cool for 10–15 minutes before slicing. Serve warm, optionally with ice cream or whipped cream.

Notes

  • Thaw the puff pastry completely before using for easier handling and better texture.
  • If fresh peaches aren’t available, frozen sliced peaches can be used; thaw and drain excess juice before assembling.
  • For a dairy-free option, substitute butter with a plant-based alternative.
  • Coarse sugar on the crust gives a nice crunchy texture and sparkling finish; sanding sugar is a good substitute.
  • To prevent the crust edges from burning, you can loosely cover them with foil halfway through baking.
