Instructions

- Mix the spices: In a small bowl, combine the cinnamon, brown sugar, and cornstarch to create a spiced sugar mixture.
- Assemble the base: Sprinkle half of the cinnamon-sugar mixture evenly over the bottom of the chilled puff pastry.
- Arrange the peaches: Layer the sliced peaches over the spiced pastry base in overlapping circles or rows for an attractive presentation.
- Add remaining spice: Evenly sprinkle the remaining cinnamon-sugar mixture over the peach slices.
- Create a border: Fold the edges of the puff pastry over the peach filling to form a rustic crust border, partially covering the peaches.
- Apply egg wash and sugar: Brush the folded pastry edges with the whisked egg and sprinkle with coarse granulated sugar for a golden, sweet finish.
- Drizzle butter: Pour the melted unsalted butter over the peach filling to enhance flavor and aid browning during baking.
- Bake: Place the skillet in the preheated oven and bake for 35 minutes, or until the crust turns golden and the peaches are bubbling.
- Cool and serve: Allow the galette to cool for 10–15 minutes before slicing. Serve warm, optionally with ice cream or whipped cream.

- Coarse sugar on the crust gives a nice crunchy texture and sparkling finish; sanding sugar is a good substitute.
