Description

These Mediterranean Quesadillas combine fresh spinach, creamy feta, melty mozzarella, and vibrant red onion inside warm flour tortillas. Perfect as a quick and flavorful meal, they are pan-fried until golden and crispy.

Ingredients

Scale

Main Ingredients

  • 4 flour tortillas
  • 1 cup fresh spinach (chopped)
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup crumbled feta cheese
  • 1 small tomato (diced)
  • 1/4 cup red onion (thinly sliced)
  • 1 tablespoon olive oil
  • Black pepper (to taste)

Instructions

  1. Prepare the filling: In a mixing bowl, combine the mozzarella cheese, feta cheese, chopped spinach, diced tomato, thinly sliced red onion, and black pepper. Mix everything thoroughly to evenly distribute the ingredients.
  2. Assemble quesadillas: Lay one flour tortilla flat on a clean surface. Place one-fourth of the filling mixture on one half of the tortilla, then fold the other half over the filling to create a half-moon shape.
  3. Heat the skillet: Heat a non-stick skillet over medium heat and add the tablespoon of olive oil, allowing it to warm up but not smoke.
  4. Cook the quesadilla: Place the folded tortilla in the skillet and cook for 4 minutes until the bottom is golden brown and crispy.
  5. Flip and cook other side: Carefully flip the quesadilla using a spatula, then cook for another 4 minutes until the other side is also golden brown and the cheese has melted.
  6. Serve: Remove the quesadilla from the skillet, slice into wedges, and serve warm for the best flavor and texture.

Notes

  • Use whole wheat tortillas for a healthier alternative.
  • If you prefer, substitute fresh tomatoes with sun-dried tomatoes for more intense flavor.
  • For a spicier version, add a pinch of red chili flakes into the filling.
  • Make sure the skillet is not too hot to prevent burning before the cheese melts.
  • Serve with a side of tzatziki or hummus for added Mediterranean flair.
