- 1/4 cup butter softened
- 1 tablespoon lemon juice
- 1 tablespoon minced parsley
- 1 teaspoon minced garlic
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
Instructions
- Preheat Oven: Preheat the oven to 400 degrees Fahrenheit and spray a large rimmed baking sheet with non-stick spray to prepare for baking the cod fillets.
- Prepare Butter Mixture: In a small bowl, combine the softened butter, lemon juice, minced parsley, minced garlic, salt, and pepper. Mix thoroughly with a fork until well combined.
- Apply Mixture and Add Lemon: Spread the butter mixture evenly over each cod fillet ensuring each piece is well coated. Top each fillet with a slice of lemon for added flavor and moisture.
- Bake Cod: Place the prepared fillets on the baking sheet and bake in the preheated oven for 15 minutes or until the cod is opaque and flakes easily with a fork, indicating it is cooked through.
Notes
- This recipe also works well with tilapia and other firm white fish if cod is not available.
- Ensure the butter is softened before mixing to achieve an even spread over the fillets.
- You can garnish with additional fresh parsley before serving for extra color and flavor.
- Use fresh lemon juice instead of bottled for the best taste.
