For the Deviled Eggs:

  • 12 hard boiled eggs peeled, halved, whites and yolks separated
  • ½ cup mayonnaise

  • Sliced pimento-stuffed green olives
  • Orange food coloring
  • Curly parsley

Instructions

  1. Prepare the yolk mixture: Place egg yolks in a small bowl and use a fork to crush them until no large chunks remain. Add mayonnaise, Dijon mustard, and kosher salt; stir until well combined to form a smooth yolk filling.
  2. Divide for varieties: Decide how many Halloween deviled egg varieties you want to make. For all four, divide the yolk mixture into four small bowls and set aside 6 egg whites for each variety. For fewer varieties, adjust yolk and white portions accordingly.
  3. Eyeball Deviled Eggs: Add purple food coloring a few drops at a time to one bowl of yolk mixture until desired color is reached. Fill egg whites with this purple mixture. Slice pimento-stuffed green olives crosswise into pieces resembling eyeballs and top each egg with a slice.
  4. Pumpkin Deviled Eggs: Add orange food coloring a few drops at a time to another bowl of yolk mixture until desired color is reached. Fill egg whites with the orange yolk filling. Use a toothpick to make vertical lines in the yolk filling to mimic pumpkin creases. Garnish each with a small piece of curly parsley to represent the pumpkin stem.
  5. Spooky Green Deviled Eggs: Stir green food coloring a few drops at a time into another bowl of yolk mixture until the desired shade is achieved. Fill egg whites and sprinkle black sesame seeds on top for a spooky effect.
  6. Spider Deviled Eggs: Use the remaining plain yolk mixture without food coloring. Fill egg whites with the mixture. Cut black olives into halves or slices to create spider bodies and legs, then arrange them on top of the eggs to resemble spiders.
