Description

A flavorful and creamy garlic mushroom pasta featuring sautéed cremini mushrooms, fresh garlic, and parmesan cheese tossed with perfectly cooked pasta for an easy and delicious weeknight meal.

Pasta

  • 4 ounces uncooked pasta

Sauce

  • 1 tablespoon olive oil
  • 3 tablespoons butter, divided
  • 1/2 medium onion, chopped
  • 8 ounces cremini mushrooms, sliced
  • 3 cloves garlic, minced
  • 1/2 teaspoon Dijon mustard
  • 1/4 cup chicken broth or vegetable broth or white wine
  • 1/2 teaspoon lemon juice
  • Zest of 1/2 lemon
  • 1/2 cup freshly grated parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. Cook Pasta: Boil a salted pot of water and cook the pasta al dente according to package directions. Reserve a couple tablespoons of hot pasta water before draining.
  2. Sauté Vegetables: Heat olive oil and 1 tablespoon butter in a skillet over medium-high heat. Add chopped onions and sliced mushrooms, sautéing with occasional stirring until the mushrooms release their water, it evaporates, and they become browned and caramelized, about 10 minutes.
  3. Add Aromatics: Stir in remaining 2 tablespoons of butter, minced garlic, and Dijon mustard. Cook for about 1 minute until fragrant.
  4. Deglaze and Flavor: Add broth and lemon juice along with lemon zest, letting the mixture bubble for about 1 minute to combine flavors.
  5. Finish Sauce: Remove pan from heat and stir in parmesan cheese and chopped parsley to create a creamy sauce.
  6. Toss Pasta and Serve: Add the reserved hot pasta water to the sauce, toss in the drained pasta, and combine well. Season with salt and pepper as needed and serve immediately.

Notes

  • This recipe serves 2 but can be stretched to feed 4 by adding more pasta; however, mushrooms and onions will take longer to sear with larger quantities.
  • The mushrooms and onions should be well caramelized for maximum flavor, so be patient during sautéing.
  • You can substitute chicken broth with vegetable broth or white wine depending on your preference.
  • Freshly grated parmesan cheese is best for optimal flavor and creaminess.
