Ingredients
Scale
Chicken
- 1 1/4 lbs. boneless skinless chicken breasts, cut into 1 1/4-inch pieces
- 2 Tbsp all-purpose flour
- 1 1/2 tsp Italian seasoning
- Salt and freshly ground black pepper (about 3/4 tsp salt and 1/2 tsp pepper recommended)
Cooking
- 1 Tbsp olive oil
- 3 Tbsp unsalted butter, divided
- 1 1/2 Tbsp minced fresh garlic (4 cloves)
- 2 Tbsp finely chopped fresh parsley
Instructions
- Preheat Skillet: Preheat a 12-inch non-stick skillet over medium-high heat to ensure it’s hot enough to brown the chicken properly.
- Prepare Chicken: Pat the chicken pieces dry with paper towels on all sides to remove moisture for better browning.
- Coat Chicken: Sprinkle the flour, Italian seasoning, salt, and black pepper over the chicken. Toss well until the chicken is evenly coated with the flour mixture.
- Heat Oil and Butter: Add 1 tablespoon olive oil and 1 tablespoon butter to the skillet, allowing the butter to melt quickly. Tilt the pan to coat the bottom evenly.
- Cook Chicken Side One: Place the chicken pieces in a single layer with space between them. Cook without moving for about 3 minutes until the bottom is nicely golden brown.
- Cook Chicken Side Two: Flip the chicken pieces and cook for an additional 2 minutes or until the chicken is nearly cooked through.
- Add Garlic and Butter: Add the remaining 2 tablespoons of butter in small pieces along with minced garlic and chopped parsley to the skillet. Cook together for 1 more minute until the garlic is fragrant and the chicken reaches an internal temperature of 165°F.
- Serve: Remove from heat and serve immediately for the best flavor and texture.
Notes
- For extra herb flavor, double the amount of parsley used.
- Finish the dish by squeezing in juice from half a lemon for a bright, fresh flavor layer.
- Serve with lemon couscous made by boiling chicken broth with lemon and water, then soaking couscous for 5 minutes before fluffing.
- This dish pairs well with sautéed or steamed vegetables like squash, zucchini, asparagus, or broccoli for a quick and balanced meal.
