  • 4 oz lemon chevre, softened to room temperature

  • 2 cups arugula leaves

  • 1 tablespoon fresh lemon juice
  • Fresh cracked black pepper, to taste


Instructions

  1. Prepare the prosciutto slices: Slice each piece of prosciutto in half lengthwise and lay them flat on a cutting board, arranging them so they are easy to work with for assembling the roll ups.
  2. Spread the cheese: Using about one teaspoon of lemon chevre per slice, spread the cheese on the rounded top edge of each prosciutto slice, applying it in an upward arc for easier rolling.
  3. Add fig preserves: Spread approximately half a teaspoon of fig preserves gently over the cream cheese on each prosciutto slice to add a balanced sweetness.
  4. Add arugula and drizzle dressing: Place a few fresh arugula leaves on top of the fig preserves. In a small bowl, whisk together the extra virgin olive oil and fresh lemon juice, then drizzle this mixture lightly over the arugula for brightness and moisture.
  5. Season and roll: Sprinkle fresh cracked black pepper over the arugula leaves, then carefully roll each prosciutto slice tightly to enclose the fillings and form a neat roll up.
  6. Repeat and serve: Continue assembling the remaining rolls using the same technique. Serve immediately or refrigerate until ready to serve for maximum freshness.
