- ¼ cup sugar
- 1 tbsp lemon juice
- 1 tsp cornstarch

Instructions
- Prepare Strawberries: Wash, de-stem, and slice fresh strawberries in half or quarters. Reserve half of the berries in a mixing bowl for later.
- Puree Strawberries: Place the remaining half of the strawberries into a blender or food processor and blend until fully puréed.
- Combine Ingredients: Pour the strawberry purée, cornstarch, lemon juice, and sugar into a saucepan. Mix well to combine all ingredients.
- Cook the Glaze: Heat the mixture over medium-high heat until it reaches a gentle boil, then reduce to low-medium heat and cook until thickened, usually a few minutes. Test by dipping a spoon; if the back remains coated with the glaze, it’s ready.
- Add Vanilla: Remove from heat and stir in the vanilla extract until well combined.
- Strain and Combine: Pour the hot strawberry glaze through a mesh strainer into the bowl with the fresh reserved berries. Stir the fresh berries with the warm glaze until fully coated.
- Cool and Store: Allow the glaze to cool to room temperature or chill before using as a topping.

- Makes about 1.5 cups of strawberry glaze.
- Store leftover glaze in an airtight container in the fridge for up to 3 to 4 days.
