Apple Pie Filling

  • 8 granny smith apples thinly sliced to ¼ inch thick
  • ¼ cup brown sugar
  • 2 teaspoons cinnamon
  • 1 lemon juiced
  • 3 tablespoons cornstarch
  • ½ cup water divided

Crust

  • 2 homemade or store-bought rollout vegan pie crusts
  • Neutral oil to coat the baking dish

Streusel Topping

  • 1 cup old-fashioned rolled oats
  • ½ cup brown sugar packed (light or dark)
  • ¾ cup all-purpose flour
  • ¼ teaspoon cinnamon
  • ½ cup vegan butter diced and chilled


Instructions

  1. Cook the Apples: Add the apples, brown sugar, cinnamon, lemon juice, cornstarch, and ¼ cup water into a large pot with a lid. Gently mix without breaking the apples. Cover with the lid and cook over medium-low heat for 5 minutes.
  2. Finish Apple Filling: Add the remaining ¼ cup of water, mix well until fully incorporated. The mixture will begin to thicken. Cover again, reduce heat to low, and cook an additional 5 minutes, stirring occasionally to prevent burning. Remove from heat and let cool.
  3. Prepare Baking Dish: Lightly oil a 9×13 inch baking dish. Place one pie crust in the dish, trimming excess dough and setting it aside.
  4. Make Streusel Topping: In a medium bowl, combine oats, brown sugar, flour, cinnamon, and chilled vegan butter. Mix with hands until clumps form. Set aside.
  5. Assemble Bars: Preheat oven to 350 degrees F. Spread cooled apple filling evenly over the bottom crust. Place second pie crust on top, trimming excess dough again. Dice the reserved dough pieces and add them to the oat mixture, mixing well.
  6. Add Streusel and Bake: Sprinkle the streusel mixture evenly over the top crust. Bake for 35 minutes or until the streusel topping is golden brown.
  7. Cool and Refrigerate: Remove from oven and cool completely. Refrigerate for at least 1 hour or overnight to set the filling for firmer slices.
  8. Serve: Slice into bars and serve, optionally with vegan vanilla ice cream.
