Description

Delicious and easy-to-make Date Snickers combining sweet Medjool dates stuffed with creamy peanut butter and crunchy roasted peanuts, all coated in rich dark chocolate. Perfect for a healthy snack or a sweet treat.

Dates and Filling

  • 12 Medjool dates
  • 1/4 cup peanut butter, divided
  • 1/4 cup chopped roasted peanuts, divided

Chocolate Coating

  • 4 ounces dark chocolate bar, cut into chunks


Instructions

  1. Prepare the Dates: Use a small sharp knife to cut a slit lengthwise in each Medjool date and carefully remove the pits, creating space for the filling.
  2. Stuff the Dates: Fill each pitted date with 1 teaspoon of peanut butter and then add 1 teaspoon of crushed roasted peanuts on top. Set these stuffed dates aside.
  3. Melt the Chocolate: Place the chocolate chunks in a microwave-safe bowl. Microwave in 30 second intervals, stirring well between each interval until the chocolate is completely melted and smooth.
  4. Dip the Dates: Insert a toothpick into each stuffed date for easy handling. Dip each date into the melted chocolate, using a spoon to completely coat it. Let excess chocolate drip off.
  5. Set and Garnish: Place the chocolate-coated dates on a parchment-lined tray or plate. Sprinkle the remaining crushed peanuts on top of each chocolate-covered date.
  6. Chill: Refrigerate the dates for about 10 minutes to allow the chocolate to set firmly before serving.
