Ingredients

Units Scale

Main Ingredients

  • 1 tbsp Olive Oil
  • 14 oz Smoked Sausage, sliced
  • 1 Yellow Onion, diced
  • 1 Green Bell Pepper, diced
  • 1 Red Bell Pepper, diced
  • 1 tbsp Veggie Seasoning Blend
  • 6-7 Garlic Cloves, minced
  • 1 cup Chicken Broth
  • 1 cup Heavy Cream
  • 5.3 oz Boursin Garlic and Fine Herbs Cheese
  • 19 oz Frozen Cheese Tortellini
  • 3 oz Shaved or Grated Parmesan
  • 1 tsp Red Pepper Flakes, optional
  • Salt and Pepper to taste

Instructions

  1. Brown the Sausage: In a large skillet over medium heat, heat olive oil. Add the sliced smoked sausage and sauté until browned. Remove the sausage from the skillet and set aside.
  2. Cook the Vegetables: Add the diced onion, green bell pepper, and red bell pepper to the same skillet. Season with veggie seasoning blend, salt, and pepper. Cook for about 5 minutes until the vegetables are softened.
  3. Sauté Garlic: Stir in the minced garlic and cook for 1 minute more until fragrant.
  4. Add Liquids and Cheese: Pour in the chicken broth and heavy cream. Add the Boursin cheese and stir continuously until the cheese is completely melted and the sauce is smooth.
  5. Cook Tortellini: Add the frozen cheese tortellini to the skillet. Bring the mixture to a boil, then cover the skillet, reduce heat to low, and let it simmer for 10 minutes until the tortellini is cooked through and tender.
  6. Finish the Dish: Remove the lid, stir in the grated Parmesan cheese and red pepper flakes if using. Return the browned sausage to the pan. Simmer uncovered for a few more minutes until the sauce thickens slightly. Adjust seasoning with salt and pepper as needed.
  7. Serve: Serve the creamy tortellini hot and enjoy your flavorful meal!

Notes

  • Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheating: Reheat gently in a skillet over low heat with a splash of chicken broth or cream to loosen the sauce. You can also reheat in the microwave, stirring halfway through for even heating.
  • Texture: Freshly cooked tortellini will be al dente, but leftovers may soften slightly upon reheating.
  • Red Pepper Flakes: Adjust the amount of red pepper flakes according to your spice preference or omit for no heat.
  • Vegetarian Option: Substitute smoked sausage with a plant-based sausage to make it vegetarian-friendly.
