Description

A flavorful and easy Mushroom Cauliflower Skillet recipe featuring cremini mushrooms and cauliflower florets cooked with garlic, onion, and Italian seasoning for a delicious low-carb side dish or light main course.

Ingredients

Scale

Main Ingredients

  • ¼ cup unsalted butter
  • 2 tablespoons olive oil
  • 1 small onion, sliced
  • ½ head cauliflower, cut into small florets
  • 1 pound cremini mushrooms, halved or quartered if large
  • 1 teaspoon Italian seasoning
  • Salt to taste
  • Black pepper to taste
  • ¼ cup vegetable broth
  • 3 cloves garlic, minced
  • ¼ teaspoon red pepper flakes
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Heat fats and caramelize onions: Add the butter and olive oil to a large skillet and heat over medium-low heat. Once the butter has melted, add the sliced onion and cook for about 5 minutes until the onions begin to caramelize and develop a slight golden color.
  2. Cook cauliflower and mushrooms: Add the cauliflower florets, cremini mushrooms, Italian seasoning, salt, pepper, and vegetable broth to the skillet. Cook for about 10 minutes, stirring occasionally, until the mushrooms and cauliflower develop a nice brown color and are tender.
  3. Add garlic and finish cooking: Add the minced garlic to the skillet and cook for another 30 seconds until fragrant. Taste and adjust seasoning with additional salt and pepper if needed.
  4. Garnish and serve: Sprinkle the red pepper flakes and chopped fresh parsley over the top, then serve warm.

Notes

  • Use both butter and olive oil to prevent the butter from burning due to the olive oil’s higher smoke point.
  • Cook onions slowly at a low temperature to achieve proper caramelization instead of frying.
  • Stir the vegetables regularly as they cook to ensure even browning and prevent overcooking spots.
  • Leftovers can be refrigerated in an airtight container for up to 5 days or frozen for up to 3 months.
  • For reheating, microwave on medium power or warm in a saucepan. If frozen, thaw overnight in the fridge before reheating.
