Scale
Main Ingredients
- 5 cups corn flakes
- 1 cup corn syrup
- 1 cup granulated sugar
- 1 cup peanut butter (smooth or chunky)
- 1 teaspoon vanilla extract (optional)
Instructions
- Prepare the surface: Lightly spray a baking sheet or cover it with parchment paper or non-stick aluminum foil to prevent sticking.
- Measure corn flakes: Measure out 5 cups of corn flakes and set them aside for later use.
- Heat syrup and sugar: In a small saucepan, combine 1 cup corn syrup and 1 cup granulated sugar. Heat over medium-low heat, stirring occasionally, until the sugar has completely melted and the mixture is smooth.
- Add peanut butter and vanilla: Stir in 1 cup peanut butter and 1 teaspoon vanilla extract (if using) into the saucepan. Continue stirring until the peanut butter has fully melted and the mixture is well combined.
- Mix in corn flakes: Turn off the heat but keep the saucepan on the burner. Add the measured corn flakes and quickly stir to coat them evenly with the syrup-peanut butter mixture before it cools and sets.
- Form the candy: Lightly coat 2 spoons or a cookie scoop with baking spray. Use them to drop spoonfuls of the mixture onto the prepared baking sheet, shaping them as desired.
- Cool and store: Allow the candy pieces to cool completely at room temperature. Once set, store them in an airtight container for freshness.
Notes
- Measure out all ingredients before starting to facilitate smooth cooking.
- Spray measuring utensils with baking spray before filling sticky ingredients to ease cleanup.
- Keeping the mixture over very low heat on the burner extends the time you have to form candies before the mixture sets.
- To clean the pan easily, scrape out as much cooled mixture as possible, soak the pan in hot water for 1 to 15 minutes, then wash as normal.
- If adding sprinkles or jimmies, apply them immediately after dropping the candy pieces so they stick properly.
- Store candies between sheets of plastic wrap, wax paper, or parchment paper in an airtight container to prevent sticking.
