Instructions

  1. Prepare the surface: Lightly spray a baking sheet or cover it with parchment paper or non-stick aluminum foil to prevent sticking.
  2. Measure corn flakes: Measure out 5 cups of corn flakes and set them aside for later use.
  3. Heat syrup and sugar: In a small saucepan, combine 1 cup corn syrup and 1 cup granulated sugar. Heat over medium-low heat, stirring occasionally, until the sugar has completely melted and the mixture is smooth.
  4. Add peanut butter and vanilla: Stir in 1 cup peanut butter and 1 teaspoon vanilla extract (if using) into the saucepan. Continue stirring until the peanut butter has fully melted and the mixture is well combined.
  5. Mix in corn flakes: Turn off the heat but keep the saucepan on the burner. Add the measured corn flakes and quickly stir to coat them evenly with the syrup-peanut butter mixture before it cools and sets.
  6. Form the candy: Lightly coat 2 spoons or a cookie scoop with baking spray. Use them to drop spoonfuls of the mixture onto the prepared baking sheet, shaping them as desired.
  7. Cool and store: Allow the candy pieces to cool completely at room temperature. Once set, store them in an airtight container for freshness.
