Ingredients
Scale
Peanut Butter Mixture
- ½ cup creamy peanut butter
- 3 tbsp salted butter, softened
- 2 tbsp granulated white sugar
- ½ tsp salt
- ¾ cup powdered sugar
Assembly
- 72 mini twist pretzels
Topping
- ¾ cup dark chocolate chips
- Sea salt, optional garnish
Instructions
- Mix Peanut Butter Base: Use a stand or hand mixer to beat the creamy peanut butter, salted butter, granulated white sugar, and salt together in a medium-sized mixing bowl until fully combined and smooth.
- Add Powdered Sugar: Gradually beat in the powdered sugar on a low setting until a soft dough forms with a smooth consistency.
- Prepare Freezing Surface: Line a large sheet pan that fits in your freezer with parchment paper to prevent sticking during freezing.
- Form Peanut Butter Balls: Scoop out ½ tablespoon of the peanut butter mixture and roll it into a ball using your hands for uniform size.
- Create Pretzel Sandwiches: Use two mini twist pretzels to sandwich each peanut butter ball, gently pressing the pretzels towards each other to form a ½ inch thick sandwich. Repeat until around 36 sandwiches are formed.
- Freeze Sandwiches: Place all sandwiches on the prepared sheet pan and freeze for 30 minutes to firm up, or alternatively refrigerate for the same amount of time.
- Melt Chocolate: Place dark chocolate chips in a microwave-safe bowl and heat in 15-second increments, stirring between each, until fully melted and smooth, approximately 2-3 minutes total.
- Dip and Garnish: Dip each peanut butter pretzel sandwich halfway into the melted chocolate, place back onto the parchment-lined sheet pan, and optionally sprinkle with sea salt.
- Set Chocolate Coating: Return the sheet pan with dipped bites to the freezer for 15 minutes to allow the chocolate to set completely.
- Serve or Store: Serve the bites immediately chilled or store them in the refrigerator until ready to enjoy.
Notes
- Store pretzel bites in an airtight container in the refrigerator for 1-2 weeks to maintain freshness.
- For longer storage, freeze the bites in a freezer-safe container for up to three months. Serve frozen or thaw in the refrigerator before serving.
- Use mini twist pretzels for easy sandwich formation; pretzel sticks or rods are not recommended.
- Line sheet pans with parchment paper to prevent sticking and make cleanup easier.
- If your sheet pan cannot accommodate all bites or does not fit in your freezer, use multiple smaller pans to freeze them in batches.
