  • 3 cups old fashioned oatmeal
  • 1 cup semisweet chocolate chips

Instructions

  1. Mix Butter and Sugars: In a large bowl, combine 1 cup softened butter, 3/4 cup golden brown sugar, and 1/2 cup granulated sugar using an electric hand mixer until creamy.
  2. Add Bananas, Eggs, and Vanilla: Mash 2 ripe bananas thoroughly and add to the butter mixture along with 2 eggs and 1 teaspoon vanilla extract. Beat on medium speed until well combined.
  3. Sift Dry Ingredients: Hold a fine-mesh sieve over the bowl and sift in 2 cups all-purpose flour, 3/4 teaspoon baking soda, 1/2 teaspoon salt, 1 1/2 teaspoon cinnamon, and 1/4 teaspoon nutmeg. Mix everything together at low speed until combined.
  4. Add Oats and Chocolate Chips: Fold in 3 cups old-fashioned rolled oats and 1 cup semisweet chocolate chips using a spatula until evenly mixed.
  5. Scoop Cookie Dough: Line a baking sheet with parchment paper and scoop out mounds of cookie dough using a medium cookie scoop. Optionally, round the dough balls by hand or top with extra chocolate chips.
  6. Bake: Preheat the oven to 350 degrees Fahrenheit. Bake the cookies for 9 minutes until edges are set but centers remain soft. Let cookies cool before serving.

Notes

  • If you don’t have ripe bananas, ripen unpeeled bananas in the oven at 300 degrees Fahrenheit for 20 minutes on a parchment-lined baking sheet.
  • You can freeze the cookie dough balls. Place scooped dough on a parchment-lined sheet, freeze for 1 hour, then transfer to a ziplock bag and freeze up to 3 months. Bake from frozen as directed.
