Instructions

  2. Add wet ingredients and mix: Add the beaten eggs and whole milk to the dry mix, stirring until well combined. Then gently fold in the chopped green onions and grated cheddar cheese until fully incorporated.
  3. Heat the oil: Place a skillet over medium heat and add enough vegetable oil to generously coat the bottom. Heat until shimmering but not smoking.
  4. Cook the fritters: Drop the batter by 2-tablespoon portions into the hot skillet, flattening each portion gently with the back of a spoon or spatula.
  5. Fry until golden: Cook each fritter for 3-4 minutes on one side until golden brown and crispy, then flip and cook the other side for the same amount of time.
