Description

A flavorful and hearty Cabbage and Sausage dish featuring tender cabbage, spicy Andouille sausage, and seasoned with Cajun spices, perfect as a comforting main course or side dish.

Ingredients

Scale

Main Ingredients

  • 1 tbsp Olive oil
  • 12 oz Andouille Sausage, sliced thinly
  • 2 tbsp Unsalted butter
  • 1/2 large Onion, diced
  • 1 medium head Cabbage, shredded (8 cups)
  • 1 14.5-oz can Diced tomatoes, drained
  • 1 tsp Cajun seasoning
  • 1/2 tsp Sea salt

Instructions

  1. Cook the sausage: Heat the olive oil in a large sauté pan or braiser pan over medium-high heat. Add the sliced sausage and cook for 1-2 minutes per side until browned and the fat is rendered. Transfer the sausage to a plate and cover to keep warm.
  2. Prepare the pan: Wipe down the pan to remove excess fat, then add the unsalted butter and reduce heat to medium-low.
  3. Sauté the onions: Add the diced onions to the pan and cook for 8-10 minutes, stirring occasionally, until the onions are soft and starting to brown.
  4. Cook the cabbage: Add the shredded cabbage to the pan, cover, and cook for 3-4 minutes until the cabbage starts to wilt near the bottom of the pan.
  5. Wilt the cabbage: Uncover and stir the cabbage well. Cook uncovered for an additional 1-2 minutes until the cabbage is slightly wilted but still crisp-tender.
  6. Add remaining ingredients: Stir in the drained diced tomatoes, Cajun seasoning, sea salt to taste, and the cooked sausage pieces. Increase the heat to medium-high.
  7. Final stir fry: Stir fry the mixture for 3-4 minutes until the cabbage is fully wilted and excess liquid has evaporated, blending all the flavors together. Serve hot.

Notes

  • Use Andouille sausage for a spicy Cajun flavor, but you can substitute with any smoked sausage or kielbasa.
  • Drain diced tomatoes well to prevent excess moisture and sogginess.
  • Adjust Cajun seasoning to your heat preference.
  • For a gluten-free version, ensure sausage and seasoning contain no gluten additives.
  • Serve this dish as a main course or alongside rice or crusty bread for a fuller meal.
  • Leftovers store well and can be reheated on stovetop or microwave.
