- Add whipped cream: Pour the chilled heavy whipping cream into the bowl and whisk on medium speed for 1-2 minutes until stiff peaks form, creating a pipeable cream. Use a spatula to scrape the sides and bottom for an even mixture.
- Dip cookies: Quickly dip Biscoff cookies into the strong coffee or espresso for 1-2 seconds each to soak but not become soggy.
- Layer the dessert: Arrange two layers of soaked Biscoff cookies at the bottom of your serving dish or cups, pressing in chopped cookies to fill gaps if desired.
- Add cream layer: Spread half of the Biscoff mascarpone cream evenly over the cookie layers.
