Instructions

  1. Prepare Cookie Dough: Combine softened butter and granulated sugar in a large bowl and use an electric mixer to beat until light, creamy, and well-combined. Stir in egg, egg white, and vanilla extract until fully incorporated.
  2. Mix Dry Ingredients: In a separate bowl, whisk together cake flour, cornstarch, baking powder, and salt until evenly mixed.
  3. Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, stirring on low speed after each addition until just combined. Form dough into a 1-inch thick disk and wrap it tightly with plastic wrap.
